The vineyard is located in the picturesque fishing village of Brunshuse, with its charming old houses and scenic harbor providing a beautiful setting for the vineyard. Lars Hyldeborg is the founder of Hyldeborg Vineyard, ideally located within 300 meters of the sea. The coastal climate creates the perfect conditions for the acidic and fruity wines produced at the estate.
Lars and his community of locals and friends have created a small, high-quality vineyard with 500 vines. There is still room for expansion, but for Lars, it is about maintaining the joy of winemaking and a non-commercial approach while preserving the high berry quality that forms the foundation of great wine. Hyldeborg Vineyard is known for its first-class berry quality and impressive results with sparkling cuvée wines.
Lars believes in focusing on what one does best. Therefore, expertise is sourced from experienced winemakers (large vineyards), ensuring that the vineyard’s unique character is preserved from grape to bottle. This contributes to the development and retention of Danish-produced quality wines rather than mass-produced wines, even if it costs a bit more for the true wine enthusiast.
Lars and his partner, Trine Charlot, manage the daily operations and receive extra help during peak season. Hyldeborg Vineyard’s finest wines are carefully stored in their own excavated wine cellar beneath the main house – an atmospheric space that reflects the care taken for each wine’s development.
By the end of 2025, a charming recycled greenhouse will open, where guests can enjoy the wine with light fish dishes and participate in various events, including lectures.

- Soil type: Sandy mixed with clay and light humus soil with many stones. Water reservoir in the subsoil.

- Climate: The Brunshuse and Agernæs area is one of the driest and sunniest in Denmark.
Grape Varieties
- 4 white wine varieties: Mainly Solaris, but also Black Pearl, Ortega, and Muscaris.
- 1 red wine variety: Rondo, exclusively produced for rosé wine.

- Sparkling wine: Brut and Sec, White wine, and Rosé wine.

- Sparkling 2023 “Amphitrite” cuvée Solaris, Muscaris.
- White wine 2024 “Poseidon” Solaris, Muscaris, Black Pearl, and Ortega.
- Rosé wine 2023 “Njord.”
Vinification
- Fermentation and aging in stainless steel tanks.
- Sparkling wine: Minimum 9 months bottle fermentation.
- White wine and Rosé wine: Destemming of all varieties, cold maceration, and varying skin contact for 12-24 hours depending on ripeness. Controlled fermentation at 18 degrees.
